For an occasion as big as our millennium brews, we wanted to pull out all the stops. And what better way than two big, highly-hopped double IPAs? We wanted to take this opportunity to showcase the differences between East and West Coast DIPAs, but to retain a link between the two.

Matching quantities of Crosby Centennial hops are what tie these beers together, but otherwise they’re quite different. In order to give the East Coast version it’s characteristic haze and pungent aroma we used unmalted oats, fruity English ale yeast and dry hopped with over 16 grams of Centennial per litre.

For the West Coast version we added more hops in the kettle and whirlpool than ever before. Double, in fact. Combined with the simple malt bill and clean American ale yeast, this gave us the characteristic bitterness and intense flavour.
