One of this year’s guests was Estonian brewery Pühaste, known as masters of strong, dark and complex beers. Together, we created a Double Milk Stout that opens with the aroma of dark cocoa, warms like a fine liqueur, and finishes with a gently spiced play on the palate. The base of the beer is cocoa, which gives it a rich body, full flavour and a clear dessert-like character. Dried Ancho chillies don’t overpower with heat, but add soft smokiness, a touch of dried fruit and a gentle warming finish. Cinnamon brings it all together with a subtle sweet-spicy note that complements the beer’s depth without overwhelming it.
